Isaac Villaverde is the chef and founder of La Tapa del Coco, a cultural movement dedicated to celebrating and preserving Afro-descendant heritage in Panama. Since 2013, he has led a mission to rescue and honor the rich culinary traditions and cultural legacy of the Afro-Panamanian community. Inspired by the deep roots of Afro-Panamanian cuisine shaped by Afro-Antillean and Afro-Colonial influences Chef Villaverde and his talented team have created a menu that reimagines traditional dishes with a modern twist. Each plate tells a story of history, resilience, and flavor, connecting the past with the present through food.
